BREAD MACHINE: select whole-wheat bread and light crust. (The flaxmeal makes the bread brown more quickly.) Combine the ingredients in the order given and begin the mixing process. After a few minutes of kneading, check to make sure that the dough has formed a smooth, round ball. If not, add a small amount of water or flour as needed.

BY HAND OR HEAVY-DUTY MIXER: Place water and yeast in a large mixing bowl. Let rest for several minutes. Add the white flour and 1 cup of the whole-wheat flour. Beat into a sponge. (Use the dough hook on the mixer.) Add the remaining flour along with the flaxseed meal, oil, honey, and salt. Knead thoroughly, either by hand or mixer.

Let rise in a warm place until double in bulk. Punch donw, shape into a loaf, and place into a greased bread pan. Let rise again and bake in a preheated 375-degree oven for 30 minutes or until done.
